This One Pot Cheesy Bacon Fettuccine is easy to make, easy to clean up, and tastes delicious!
I’ve mentioned before how much I dislike doing the dishes. I tend to get water everywhere and the dishes cover most of my meager counter space while they dry. (Yes, I do have a dishwasher, but it’s expensive to heat water so I don’t use it daily.) Enter the One Pot Dinner! I only had a cutting board, knife, skillet, and tongs to clean afterwards. And enough food for four days!
The lack of post-cooking mess is only one of the reasons I love this One Pot Cheesy Bacon Fettuccine. Two more are also right there in the title. Cheese and bacon. It’s awfully hard to go wrong when there is cheese and bacon involved. Pretty sure cheese has its own category in my diet.
Mmmm, tasty! Let’s get started, shall we?
For this recipe you’re going to want a deep skillet with a lid. I highly recommend this Farberware 12-Inch Deep Skillet. It’s non-stick and even has an extra handle!
First thing to do is slice up your bacon. I prefer to slice my bacon before cooking it instead of crumbling the cooked bacon. You can, of course, crumble yours if you so prefer. Once the bacon is done, remove with a slotted spoon (okay, so I guess I had five dishes to wash) and set on a paper towel. Drain most of the bacon grease and leave about 1 tablespoon.
Add the minced garlic and cook on medium for about 2 minutes, until it becomes fragrant and slightly golden.
Once your kitchen smells like delicious garlic, pour the chicken stock and heavy cream into the skillet and add the fettuccine. Turn the heat up to medium-high until boiling, then return to medium heat and cover. Cook for about 15-20 minutes, stirring occasionally so the pasta doesn’t stick together. When the pasta is done cooking (I do not recommend the ‘throwing it at the wall to see if it sticks’ method with this dish) there will be a small amount of liquid left. Add the cheeses and bacon pieces and stir to combine fully. Then Enjoy!
One Pot Cheesy Bacon Fettuccine
- ½ lb Bacon
- 2 Cloves Garlic minced
- 2 Cups Chicken Stock
- 1 Cup Heavy Cream
- 8 oz Fettuccine
- 1 Cup Monterey Jack shredded
- 1 Cup Mozzarella shredded
Slice the bacon into one inch strips. Add to skillet on medium heat and cook until crispy. Remove bacon and drain most of bacon grease, leaving one tablespoon in skillet.
Add minced garlic to the skillet and cooked for about 2 minutes, until fragrant.
Add the stock, cream, and fettuccine turning heat up to medium-high. Once boiling return the heat to medium, cover, and cook for about 15-20 minutes, until pasta is done, stirring occasionally. There should be a small amount of liquid left.
Add cheeses and bacon to skillet. Stir to combine. Enjoy!
If using spaghetti or angel hair pasta instead of fettuccine, cooking times will be shorter.
