Buttery shortbread, rich chocolate, and crushed White Peppermint M&M’s make up the three layers of these Chocolate Shortbread M&M Bars that everyone is sure to love!

My December baking list just seems to keep growing. They’re now doing a cookie exchange and two potlucks for the holidays at work. Boy am I going to be wiped after the holidays are over! What do you have on your baking list this weekend? Hopefully some Chocolate Shortbread M&M Bars!
A couple of years ago was when I first found the White Peppermint M&M’s and I was in looove. I’m a big fan of minty flavors, kinda odd since I don’t generally eat any candy canes during the holidays. But these M&M’s have mint galore! And white chocolate!
Now that we’re past Thanksgiving I knew these M&M’s would be on the shelves and it was finally time for some Christmas baking! I couldn’t wait! I look forward to the Holiday Baking Season all year.
I started these bars with shortbread 1) because it’s so easy to make, and 2) I hadn’t made any in a long time. I use a pretty basic shortbread, with only three ingredients, and press the dough into an 8” x 8” pan.
While the shortbread was baking I melted my chocolate chips and crushed the M&M’s. I used the flat side of a large knife to crush the M&M’s and then chopped any large pieces remaining.
Once the shortbread is done slather on the melted chocolate and cover with the M&M’s. Let it cool either on the counter or in the fridge.
Chocolate Shortbread M&M Bars are so easy and so quick you’re running out of excuses not to make them!
Chocolate Shortbread M&M Bars
- 1 Cup Butter softened
- 1/2 Cup Powdered Sugar
- 2 Cups All Purpose Flour
- 1 1/2 Cups Semi-Sweet Chocolate Chips
- 1/2 Cup White Peppermint M&M's crushed
Preheat oven to 350°. Line an 8" x 8" baking pan with parchment paper.
In your stand mixer beat together the butter and powdered sugar. Add in the flour 1/2 cup at a time and mix until dough forms. (It may seems crumbly at first, but will come together.)
Evenly press dough into baking pan. Cook for about 20 minutes until the edges are just slightly golden.
While the shortbread is baking, melt the chocolate in the microwave and crush the M&M's.
When the shortbread is done spread the melted chocolate over the shortbread and sprinkle with the crushed M&M's. Let cool either on the counter or in the fridge.
