Welcome back! How was everyone’s holiday weekend? Mine took a bit of a detour but turned out good in the end! I hope you survived whatever plans you had and have managed to get your house back to a presentable state.

With the New Year mere days away I decided to whip up a fun little treat to enjoy as the clock strikes midnight! Champagne Cupcakes are a light cupcake that’s bursting with flavor! And that flavor only gets stronger after the first day or two. By day three people were nearly fainting after opening the container! Sorry, not sorry?

You can use whatever kind of bubbly alcoholic drink you would like for these cupcakes. Since real champagne is a touch out of my budget, I used Moscato D’Asti. The cupcakes turned out fabulous and I didn’t mind finishing off the bottle!

How cute are these edible Silver Pearls? I originally bought them for a wedding cake I made for my friends wedding and they worked perfectly for these cupcakes too!

Who out there is making big resolutions for 2017? I’ve never been a big resolution kind of person, but I do have a few goals for next year. I’d love to remain injury free to run a couple of 5k’s and I’m reeeaaallly hoping to purchase my own home this year! What’s on the top of your list for 2017?

Champagne Cupcake

  • 1/2 Cup Butter softened
  • 3/4 Cup Granulated Sugar
  • 1/2 tsp Vanilla
  • 1 Large Eggs
  • 1 Large Egg White
  • 1 1/4 Cup All Purpose Flour
  • 1 1/2 tsp Baking Powder
  • 1/2 tsp Salt
  • 1/2 Cup Champagne or Sparkling Wine

Champagne Frosting

  • 1/2 Cup Butter softened
  • 3 1/2 Cups Powdered Sugar
  • 1/4 Cup Champagne or Sparkling Wine


  1. Preheat oven to 350°. Place cupcake liners in 9 cups of a muffin pan.

  2. In a medium bowl whisk together flour, baking powder, and salt. Set aside.

  3. In a large bowl or stand mixer with paddle attachment beat butter and sugar together until fluffy, about two minutes. Add egg and egg white, beating well after each addition. Add vanilla.

  4. Alternate adding the flour mixture and champagne to the stand mixer, starting and ending with the flour mixture. Divide batter among lined muffin cups. Bake for 18 minutes. Let cool.

  5. In your stand mixer beat together butter and champagne. Slowly add in powdered sugar. Beat on medium speed for 3-4 minutes until creamy. Pipe frosting generously onto cupcakes.
