I have been a lover of all things macaroni and cheese my whole life. I love pasta and I love cheese, when you mix them together it creates something magical! However, as I grew older, I wanted something more substantial than macaroni and cheese out of a box with powdered cheese. Don’t get me wrong, I’ll still whip up a pot of boxed macaroni and cheese when I don’t feel like cooking dinner.
Now when you don’t feel like slaving away in the kitchen to prepare dinner (or lunches for the week) just pull out the crock pot and whip up some Crock Pot Mac and Cheese! It’s so easy, you just dump the ingredients in, stir a few times, and in 2 hours you have yourself a delicious meal!
There’s quite a few macaroni and cheese recipes out there for the crock pot. The main issue I had with them was that you needed to cook your noodles before putting them in the crock pot. That just seemed like an unnecessary step. Why not do everything in the crock pot and only have one large item to clean afterwards? Makes sense to me!
Quite a few of them also called for Velveeta. I’m not a huge Velveeta fan. That’s not to say I’ve never used it or never will again, but if I don’t need it I prefer real cheese. Unless you hand me a box of Triscuits, then you better hand me a can of Easy Cheese too!
I used all mild cheddar in this recipe, but feel free to use whatever kind of cheese is your favorite or a combination of favorites. I also buy my cheese in block form and shred it myself. I don’t have scientific proof, but I think it melts better. Maybe that’s just me.
Note: Mine took right around two hours to cook fully, however, depending on your crock pot it may take more or less time to cook so I definitely recommend checking it frequently towards the end of the cooking time.
Crock Pot Mac and Cheese
- 16 oz Elbow Pasta
- 2 1/2 Cups Milk
- 1 Can Evaporated Milk
- 1/4 Cup Butter Cut into cubes
- 3 Cups Mild Cheddar Cheese divided
Combine pasta, milk, evaporated milk, butter, and two cups of the cheese in your crock pot. Add salt and pepper to taste. Set crock pot to low for 2 hours. Make sure to stir the pasta every 20-30 minutes. Add the remaining cheese after a hour and a half.
