I’ve probably never told you all before, but I love hot chocolate. I mean, really love it. I would drink it on an almost daily basis when I was younger. I still have a cup or two every week. Even in the summer.

What’s your favorite brand of hot chocolate? Mine is definitely Land O’ Lakes. They have so many different flavors and they’re all really rich and creamy! The Mint and Artic White are definitely my favorites!

Hot Chocolate Cupcakes

For my Hot Chocolate Cupcakes, instead of using regular cocoa powder, I used Land O’ Lakes hot cocoa mix. It makes for a very light, airy, and moist cupcake! I went with the Chocolate Supreme flavor, but definitely plan on making more with some of the other flavors.

I played around with the hot cocoa amounts and you’re definitely going to want a full cup of cocoa mix. It may seem like a lot, but one cup will give you plenty of cocoa flavor and keep the cupcakes from falling after you take them out of the oven. When I used less cocoa mix the nice round cupcake tops would flatten out when cooling.

Whipped Cream Frosting, used in <a href="http://agirladog.com/2016/11/14/pecan-pie-cupcakes/" target="_blank">Pecan Pie Cupcakes</a>, was my frosting of choice for the Hot Chocolate Cupcakes. It’s light, sweet, and doesn’t overwhelm the flavor of the cupcake. Whipped Cream Frosting is quickly becoming one of my favorite frostings.

Hot Chocolate Cupcakes

Ingredients

Hot Chocolate Cupcakes

  • 1 Cup Hot Chocolate Mix
  • 1 Cup Granulated Sugar
  • 2 Cups All Purpose Flour
  • 1/2 tsp Salt
  • 1/4 tsp Baking Soda
  • 1/2 tsp Baking Powder
  • 1/2 Cup Vegetable Oil
  • 1 Cup Hot Water
  • 1 tsp Vanilla Extract
  • 1 Large Egg + 1 Egg Yolk

Whipped Cream Frosting

  • 1 Cup Heavy Cream
  • 3 Tbs Powdered Sugar
  • 1 Tbs Powdered Milk
  • 1 tsp Vanilla Extract
  • Mini Marshmallows optional
  • Cinnamon optional

Instructions

Make Cupcakes

  1. Preheat oven to 350°. Line muffin pans with cupcake liners.

  2. In a large mixing bowl, whisk together the hot cocoa mix, sugar, flour, salt, baking soda, and baking powder. Add in the oil, hot water, vanilla, egg, and yolk. Stir until fully combined.

  3. Divide batter between 18 muffin cups and bake for about 15-18 minutes. Let cool completely before frosting.

Make Whipped Cream Frosting

  1. In a stand mixer fitted with the whisk attachment add the cream, powdered sugar, vanilla, and powdered milk. Set to medium-high speed and let whisk until peaks form. This took about 8-10 minutes for me.

  2. Spoon whipped cream into a piping bag with your favorite tip and pipe on the cooled cupcakes.
